I started this blog, just as one of my graduate student jobs ended. As I counted down the days to the end and then up the days as I gathered data and finished off my thesis, I wanted to keep tabs on all the events, some of the thoughts and the trials and joys that occur during various periods in my life related to my health and cooking life.
I was a grad student and a educational tech course designer, but that was not all. I am a single mother of an 28 year-old. Two years ago I finished my doctoral dissertation and up and moved to Iceland for a post doc. Less than a year after I moved here I got a tenure track postion at the University of Iceland, I am now a tenured assistant professor (hopefully soon to become an associate professor). Currently, I live in 800 sq ft apartment, that I bought two years ago. I moved in two falls ago with my son (moved to Iceland in 2016) and my little puppy who moved to Iceland in April 2014. I try and spend a lot of time out for walks, when the weather, my health and his back allows.
I love to read fiction, science fiction, fantasy, anthropology books, the SUN magazine, the newspapers on the web. I speak 6 languages, and I am educated as an economist as well as an educational policy maker and researcher. I currently focus my research on racial issues, access in education and violence against immigrant women in Iceland.
