This is a bit about my methods of cooking and thinking about food.
I was raised and learned to cook in Iceland. Food there is very different from here. For years I couldn't drink milk in the US, that is until I discovered organic milk. I don't drink it much any more, but I use heavy cream in my coffee (organic of course). I have heard many students who come here from Europe say how difficult it is too stay thin here in the US. I have been and still am an avid reader of labels on food. I by almost no ready made foods or quick meal things. I can do that with an egg and some spinach, or pasta, bacon and cheese...Even the GF biscuits I make only take a few minutes to whip up and 15 to bake.
I am not by any means a nutrition specialist. But I have enough allergies that I have tried a number of different diets. I don't know if I am gluten sensitive, but I feel less tired, less itchy and more aware of myself and I loose weight every time I am wheat and gluten free.
A few things to note a tablespoon of bacon fat is not that much mixed into a head of cabbage or anything, (so save your bacon fat in the fridge, it can be used for so many things.) Also they have recently found that butter is much much much better for you than margarine or any of those types of products. I have never eaten it (margarine), I think it tastes disgusting. I also stay away from corn oil, veggie oil and canola oil (this is one of the most sprayed crops in the US). A little butter (good organic butter is best) goes a long way. Those of you who have eaten my food, know that I like my food super simple. I do use spices and herbs, it is not that, it is more that if there is too much it detracts from the taste of the main ingredients. Lately for me that means that I pretty much just use salt and pepper. I also like simple easy meals, not that I work full time or anything like that at the moment, but I have always been a practical mom. I want my child to have the best food. Lately he has spurned what I cook, because a lot of it is meatless or weird.
